The Story

Maria Gonzalez grew up in a small Oaxacan village where her abuela taught her to roast chiles and grind salsas on a stone metate every Sunday. When she moved to Austin in 2012 to attend culinary school, she was shocked by how many store-bought salsas tasted like vinegar and artificial flavors instead of the bright, smoky blends she knew from home. She started testing small batches in her apartment kitchen that same year, sharing samples with friends and neighbors who begged for more.

Early sales were limited to pop-up farmers markets, where Gonzalez sold her salsas out of a cooler every weekend for two years. A 2015 batch of her signature chipotle salsa spoiled due to inconsistent preservation methods, costing her hundreds of dollars in wasted product and making her consider giving up entirely. That setback pushed her to partner with a local food scientist to develop a shelf-stable recipe that kept the fresh, slow-roasted flavor without any artificial additives or preservatives.

The reformulated line launched in 2016, and within a year Sabor a Mexico Salsas was stocked in 15 specialty grocery stores across Texas. Today the brand sells in 12 states, sources all its chiles directly from small family farms in Oaxaca, and its habanero mango salsa won a 2022 Specialty Food Association award. Gonzalez still oversees every small batch production run to make sure each jar tastes exactly like the salsas her abuela made.
