Benita Kasbo

Benita Kasbo is the founder and owner of Kasbo's Market and Kasbo's Middle Eastern Kitchen, a small-batch Syrian cheese maker based in New Jersey. She produces jibneh, a traditional Syrian cheese, sharing authentic Middle Eastern cuisine with her community.

Born in Aleppo, Syria, Benita immigrated to the United States at a young age and settled in Paterson, New Jersey. Cheese making has been a big tradition in her family, and she carries that legacy forward through her artisan dairy work. She participated in the Dairy Runway program at Cornell University, honing her craft and business skills.

Benita launched Kasbo's Market in May 2020, during the COVID-19 lockdowns. Her mission has been to make the delicious foods and flavors of her childhood available to others, preserving Syrian culinary heritage through small-batch production. As a proud Syrian American, she is driven by representing her culture through food.

Her work has been featured in local media including Montclair Local, where she was profiled as the cheesemaker bringing traditional Syrian jibneh to Montclair. Benita continues to grow her brand while staying true to traditional recipes and methods.
