Vesti came about after Shane and his co-founder Adam Gertler—a fellow Food Network personality—traveled to Italy to research sandwiches firsthand. The trip crystallized their vision for handcrafted focaccia, and they launched Vesti as a ghost kitchen that quickly became a local staple.
