Zac Parsons

Zac Parsons is the co-founder and CEO of Honeymoon Coffee Company, a specialty coffee brand that has grown from a single shop in Evansville, Indiana to four locations and a roasting operation. Under his leadership, the company acquired the Evansville Coffee Company roastery, giving them full control over the supply chain and enabling national online bean sales. He also serves as CEO of Evansville Coffee Company and is the host of the Conversations in the Middle podcast, which documents his experiences running a business alongside his wife Jessica.

Before founding Honeymoon Coffee Company, Parsons collaborated on entrepreneurship and innovation projects in Evansville, building the relationships and local credibility that would later support the business. His background is rooted in hands-on community involvement rather than a traditional coffee industry career, which shaped the local-first identity of the brand from the beginning.

In August 2016, Parsons and his then-fiancée Jessica opened Honey Dew Coffee Company, a single shop they would later rename Honeymoon Coffee Co. The original concept was rooted in the idea that coffee and community go hand in hand — something Parsons carried with him as the business grew. Their early success with that one location gave them the proof points to expand.

By the time of the HIBT Advice Line appearance in December 2024, Honeymoon Coffee had expanded to four retail locations and purchased the Evansville Coffee Company roastery. The acquisition gave the business an in-house roasting capacity and a wholesale channel that reaches customers nationwide. An Airbnb was also added above one of the shop locations, leaning into the "honeymoon" brand identity with a romantic riverfront property. A year after the episode aired, the national coffee subscription launched under the name One Coffee Ritual.
