The Story
Eleven Madison Park opened in 1998 in Manhattan's Flatiron District, originally part of Danny Meyer's Union Square Cafe group. In 2011, chef Daniel Humm and restaurateur Will Guidara purchased the restaurant and began reshaping it into a notable dining destination.
In 2012, the restaurant earned its first three Michelin stars — a mark it has kept every year since. By 2017, it was named the world's best restaurant by The World's 50 Best. The acclaim drew global crowds and cemented EMP as one of the defining fine-dining institutions of its era.
In 2021, Humm made a bold move: he converted the entire menu to plant-based cuisine. The decision divided the industry, but it earned EMP history in 2022 as the first purely plant-based restaurant to hold three Michelin stars. By 2024, a handful of animal products returned to the menu as the restaurant evolved toward a more inclusive Mediterranean-inspired direction.
