
Daniel Humm
Daniel Humm (born September 21, 1976) is a Swiss chef and owner of Daniel Humm Hospitality, the New York-based hospitality group behind Eleven Madison Park, Clemente Bar, and Eleven Madison Home. He was appointed a UNESCO Goodwill Ambassador for food education in September 2024.

Born in Strengelbach, Switzerland on September 21, 1976, Daniel Humm began his US career in 2003 as executive chef at Campton Place in San Francisco, where he earned four stars from the San Francisco Chronicle. Three years later he moved to New York as executive chef at Eleven Madison Park, and in 2011 he and business partner Will Guidara purchased the restaurant from Danny Meyer's Union Square Hospitality Group.
Humm and Eleven Madison Park have accumulated six James Beard Foundation Awards—including Outstanding Chef and Outstanding Restaurant in America—three Michelin stars, and the #1 spot on the World's 50 Best Restaurants in 2017. The NoMad New York restaurant, opened in 2012, also earned three stars from The New York Times, one Michelin star, and a James Beard Award for Outstanding Bar Program.
In 2019 Humm and Guidara parted ways, with Humm buying out Guidara's stake in Eleven Madison Park. He opened Davies and Brook at London's Claridge's in late 2019, and Clemente Bar—a collaboration with Italian artist Francesco Clemente—opened above Eleven Madison Park in October 2024.
Humm transitioned Eleven Madison Park to a fully plant-based menu in 2021, making it the first plant-based restaurant in Michelin Guide history to receive three stars. He is vegetarian and advocates for "pro-planet" eating as a response to climate change and overfishing.
He is the author of five cookbooks: Eleven Madison Park: The Cookbook (2011), I Love New York: Ingredients and Recipes (2013), The NoMad Cookbook (2015), Eleven Madison Park: The Next Chapter (2017), and Eat More Plants (2023). He co-founded Rethink Food, a nonprofit dedicated to a more equitable and sustainable food system, and was appointed UNESCO Goodwill Ambassador for food education in September 2024.
