The Story
Sol Dias is a family-owned Mexican paleteria bringing authentic ice cream and frozen treats to Texas. Founded by Victor Garcia and his wife Stacey in 2016, the business specializes in traditional paletas, churros, and agua frescas, offering an authentic taste of Mexico in every scoop. The name means 'Our Sun,' reflecting the founders' desire to share the warmth and sweetness of their Mexican heritage with their community. The company's flagship location opened in Haltom City, Texas, after Victor's parents had partnered with an investor who backed out, leaving them with an empty building that Victor leased and transformed into the first Sol Dias shop.
Victor Garcia was born in Mexticacan, Jalisco, Mexico — a small town nicknamed 'La Cuna del Helado y la Paleta,' the birthplace of ice cream and paletas. After his family moved to the United States and lived first in a garage in Compton, California, before relocating to Texas, Victor missed the flavors of home. That absence stayed with him through college, where he became the first in his family to graduate, earning a finance and accounting degree from the University of Texas at Dallas. After working at a CPA firm through brutal busy seasons, he quit to pursue entrepreneurship full-time.
Sol Dias serves traditional Mexican paletas and ice cream using a slow churn process that takes 25 to 35 minutes per batch, yielding a denser, richer product than typical commercial ice cream. Signature flavors include mango chamoy, rice cinnamon, and tequila paletas, alongside churros, aguas frescas, and spicy gummies. The business has expanded from a single location in Haltom City to five brick-and-mortar stores across the Dallas-Fort Worth metroplex and Central Texas, serving over 1,500 retailers through its wholesale channel.
Today, Sol Dias products are available in Sam's Club, DashMart by DoorDash, and Central Market locations throughout Texas. The company has achieved approximately .5 million in revenue with 35% year-over-year growth, maintaining a lean operation focused on product quality and community connection.
